Spinach and Feta Omelette

INGREDIENTS
5    eggs
3 tbsp    milk
150g    spinach
100g    feta
Freshly grated nutmeg
Salt and pepper
Butter for frying

RECIPE

Whisk the eggs and milk in a bowl, and season with salt and pepper. In a frying pan, sauté the spinach until wilted. Season to taste with nutmeg, salt and
pepper, and set aside. Melt butter in a fresh frying pan and add eggs. Simmer on medium-low heat for about a minute and then sprinkle the spinach and feta on top. Serve and enjoy!

Banana Oatmeal Pancakes

Yield    Three servings

INGREDIENTS
2    medium ripe bananas
2    eggs
½ cup    almond milk
1 tsp    vanilla
1½ cup    rolled oats
2 tsp    baking powder
½ tsp    cinnamon powder
¼ tsp    salt
Olive oil for cooking

RECIPE

Add all the ingredients into a blender and blend on high until completely smooth. Let the batter sit in the blender while you heat up a pan or griddle. Lightly coat the griddle with oil and place over medium heat. Once it is hot, add ⅓ cup of the batter onto the griddle for each pancake, and cook for 2-4 minutes until the pancake puffs up slightly and you see a few bubbles along the edges. Flip it over and cook until golden brown on both sides. Wipe griddle/pan clean, and repeat with more oil and the remaining batter. Serve with sliced bananas, chopped nuts and syrup.
