Spinach and Feta Omelette

INGREDIENTS
5Ā Ā Ā  eggs
3 tbspĀ Ā Ā  milk
150gĀ Ā Ā  spinach
100gĀ Ā Ā  feta
Freshly grated nutmeg
Salt and pepper
Butter for frying

RECIPE

Whisk the eggs and milk in a bowl, and season with salt and pepper. In a frying pan, sautƩ the spinach until wilted. Season to taste with nutmeg, salt and
pepper, and set aside. Melt butter in a fresh frying pan and add eggs. Simmer on medium-low heat for about a minute and then sprinkle the spinach and feta on top. Serve and enjoy!

Banana Oatmeal Pancakes

INGREDIENTS
2Ā Ā Ā  medium ripe bananas
2Ā Ā Ā  eggs
½ cup    almond milk
1 tspĀ Ā Ā  vanilla
1½ cup    rolled oats
2 tspĀ Ā Ā  baking powder
½ tsp    cinnamon powder
¼ tsp    salt
Olive oil for cooking

RECIPE

Add all the ingredients into a blender and blend on high until completely smooth. Let the batter sit in the blender while you heat up a pan or griddle. Lightly coat the griddle with oil and place over medium heat. Once it is hot, add ā…“ cup of the batter onto the griddle for each pancake, and cook for 2-4 minutes until the pancake puffs up slightly and you see a few bubbles along the edges. Flip it over and cook until golden brown on both sides. Wipe griddle/pan clean, and repeat with more oil and the remaining batter. Serve with sliced bananas, chopped nuts and syrup.
