Mock Satay Chicken

Ingredients:
8 – Chicken drumsticks/thighs with skin
1/2 cup – Peanut butter
2 tbsp – Vegetable oil
1/2 cup – Coconut milk
1/4 cup – Soy sauce
1/4 cup – Brown sugar
1 tsp – Chili powder
1 tbsp – Unroasted curry powder
1 tsp – Turmeric
3 cloves – Garlic
1 cube – Chicken stock
3 tbsp – Coconut vinegar
1 – Lime

Method:
Marinate the chicken with some salt for at least half an hour. Add the oil to a pan and fry the chicken until it’s golden brown on all sides. Mix together the peanut butter, soy sauce, and coconut milk and pour over the chicken, followed by vinegar and the rest of the spices and seasoning. Cook covered on a low-medium flame until the gravy thickens. Top off with a general splash of lime and serve.
Pairs excellently with steamed white rice.
